Downtown Salem's New Places to Eat Opened Behind Doors You Already Know

October 29, 2026

The doors at 383 State St. opened again at 5 p.m. on Oct. 22. The sign now reads Vera's Restaurant and Bar. Behind the bar is Vera Rutledge, the bartender many downtown regulars knew from W. Wallace, the bar that held this space for about nine years before it closed in July.

Most of downtown Salem's dining news this year looks like that. Of five openings reported in and around downtown in 2026, three moved into rooms that had already served food or drink, and a fourth is the first dining room for a kitchen that Salem had been ordering from for delivery. Several of them are also run by people or kitchens that Salem diners already knew. So the downtown dining map now has new names on familiar doors, and many of the people behind those doors are familiar too.

Five Openings, and Three Took Over Familiar Rooms

Here is how 2026 played out at the addresses that changed hands or gained a new kitchen.

Address What was there What's there now Opened
383 State St. W. Wallace, closed July 31 Vera's Restaurant and Bar Soft opening Oct. 22
477 Court St. NE Valiant the Sandwich, closed Feb. 22 Mesa-Sabor Latino Open now, Monday through Saturday
1313 Mill St. SE Taproot Old Mill Cafe Lively at the Mill Soft opening April 14, grand opening April 23
401 Center St. NE New storefront for a former delivery-focused ghost kitchen Sarina's Italian Kitchen, full service July 23
285 Liberty St. NE, The Forge New tenant Bonzai! Coffee + Teabar Grand opening March 20

Two of these handoffs followed closures of established downtown spots. Lively and Sarina's show the same pattern from another angle, with an existing Salem operator moving into a new room or format.

At 383 State St., the Bar Has a New Name and a Familiar Bartender

W. Wallace announced its closing on social media on July 22, and July 31 was its last day, the Statesman Journal reported. The State Street space sat dark for less than three months.

Vera's is named for Vera Rutledge, the W. Wallace bartender who now runs the room, according to the Statesman Journal's Oct. 22 report. On Instagram, Rutledge said the new menu will feature craft cocktails, European wines, shared plates, homemade desserts and happy hour.

Vera's opened with a soft opening, so expect hours and menu details to settle over its first weeks. If you're planning a visit for a group, check the bar's own channels first.

Court Street Traded Sandwiches for Pupusas and Salvadoran Spirits

Valiant the Sandwich closed suddenly at 477 Court St. NE on Feb. 22, and the owners announced it on social media. By late August, a sign on the storefront promised a fusion kitchen with Latin soul, and the new restaurant was hiring staff while renovations neared completion, the Statesman Journal reported.

That restaurant is now Mesa-Sabor Latino. The kitchen cooks Salvadoran food with influences from across Latin America. The bar follows the same idea and focuses on Central American spirits, especially Salvadoran liquors. The menu includes Puyazo, a top sirloin cap; plantain chips with guacamole; a Plato Tipico; rollitos de papa, or potato rolls; chuletas, which are stuffed beef patties; and a burger.

The restaurant runs as two different places depending on the hour:

  • 11 a.m. to 3 p.m.: You order at the counter, and staff bring your food to the table. That makes it a quick lunch for anyone working near the Capitol.
  • 3 p.m. to 9 p.m.: Full table service and the full bar.
  • Sundays: Closed. Mesa is open Monday through Saturday, so plan Sunday dinners somewhere else.

The restaurant also offers takeout, delivery and online ordering.

The Other Openings Came From Salem Operators

The newcomers at the Willamette Heritage Center and on Center Street follow the same pattern from another direction. The rooms are new to them, but the names were already familiar to Salem diners.

Lively at the Mill is a second location of Lively Station, the restaurant on River Road in south Salem. It moved into the former Taproot Old Mill Cafe space at the Willamette Heritage Center, 1313 Mill St. SE. The Statesman Journal reported that it held a soft opening April 14 and marked its grand opening April 23 with a "yarn cutting," a nod to the mill's history.

Sarina's Italian Kitchen followed a different path to a downtown storefront. On July 23, it opened its first full-service Salem restaurant at 401 Center St. NE, which completed its move from a delivery-focused ghost kitchen to a permanent dining room, the Salem Business Journal reported. The space has indoor seating, a full bar, a patio and an expanded Italian-American menu. You can enter from inside the mall or from outside the building.

Bonzai! Coffee + Teabar is the closest thing to a clean start on this list. It held its grand opening March 20 at The Forge, 285 Liberty St. NE, with a Japanese-inspired menu of coffee, matcha, boba and Japanese-fusion food, along with beer and chilled sake, according to the Statesman Journal.

Put the five together and downtown gained a Salvadoran kitchen and bar, a cocktail-and-wine room, an Italian dining room with a patio, a second Lively location and a Japanese-inspired cafe. Downtown didn't need a single new building to get any of them.

The Calendar Through Mid-December Runs Past Several of These Doors

These openings matter more as the outdoor season winds down. Salem Saturday Market runs every Saturday from March through October, 9 a.m. to 2 p.m., at 865 Marion St. NE, so after Oct. 31 it won't be back until spring. The holiday events that take over this stretch of the calendar happen within walking distance of the kitchens above, and one of them is at Lively's address.

  1. Magic at the Mill, Nov. 27 to 30, 5:30 to 8 p.m. The Willamette Heritage Center hosts its holiday event at 1313 Mill St. SE, the same address as Lively at the Mill. If you want dinner and the event in one trip without moving the car, this is the easiest evening of the season to plan.
  2. Annual Tree Lighting Ceremony at the Oregon State Capitol, Dec. 1, 5 to 7 p.m. Capitol Visitor Services lists choral music at 5 p.m. and a dignitary program at 5:30 p.m., followed by free Santa photos and refreshments while supplies last. Dec. 1 is a Tuesday, so Mesa-Sabor Latino on Court Street will be in its evening table-service hours for a meal afterward. Vera's on State Street is close by too.
  3. Salem Holiday Market, Dec. 11 to 13. This one is outside downtown, at the Oregon State Fairgrounds, 2330 17th St. NE. The organizer lists free admission and $10 fairgrounds parking.

Lively at the Mill is on Mill Street. Vera's, Mesa-Sabor Latino, Sarina's and Bonzai are all on the downtown grid between State Street and Center Street. With Saturday Market off until March, these five 2026 openings are where downtown's new food and drink options will be this winter.

I like to keep track of how downtown Salem's storefronts change hands, because every new tenant changes how the surrounding blocks feel day to day.
